“Daruma Soba is the most easy-to-pick soba product that has a characteristic but is close to the conventional image,” says Yuta Fujisawa, the eldest son of the president and the manager of the sales department. “Since it is overwhelmingly women who shop at stores, we decided to create products that women could pick up.” In the first place, there is data that Japanese people prefer a smooth texture, and I heard from soba shops that women tend to prefer thin soba noodles. Using buckwheat flour from Hokkaido ground with a stone mill, we repeated trial production by changing the composition of buckwheat flour and wheat flour and the fineness of buckwheat, and on July 8, last year, three years after the start of the project, it was named after a daruma doll. “The noodles are finely chopped closer to the noodles than between the buckwheat and somen noodles, and the combination of buckwheat flour and wheat flour has a smoothness and a ratio of 5: 5 that allows you to enjoy the aroma of buckwheat. , The smooth texture is improved. ” Mr. Fujisawa and his colleagues chose “Daruma-mo” from the 4th generation Nakazawa Farm in Mukawa Town, which has a long but richer stickiness. “In order to differentiate ourselves in the market full of dried soba products, we chose the catchy name” Daruma soba “taken from the noodles, and the packaging is clean and cute so that it can be picked up by women. Also, because the noodles are thin, the boiling time is 3 minutes and 30 seconds, which is shorter than that of regular soba noodles. Mr. Fujisawa expects this summer’s consumption as a substitute for somen as well as New Year’s Eve demand.
